*Our rolls are meant to be as simple as possible. There are no unnecessary decorations and minimal amounts of sauces and condiments. They are kept to a bare minimum to let the high-quality ingredients shine through using two types of vinegar depending on the ingredients. Hikarimono and stronger flavored items will utilize the Akasu (red sake lees vinegar) which gives it the look of brown rice. Still, we are only using the highest quality Koshihikari white rice with both kinds of vinegar.-
